Pickled onion

These pickled onions are a great addition to any vegetable burgers, meatballs or roasted vegetables with dips, by adding just that perfect amount of a little sweet and a little sour.

Pickled onion
  • 1 medium sized onion, very finely sliced
  • Juice from one lemon
  • 1 tsp salt
  • 1 tsp maple syrup or other sweetener
  • 1 small sprig of thyme (optional)
  1. Massage the liquids and the salt into the onions and leave for at least one hour in a glass container.
