1 can of Planet Plant-Based Jackfruit
1 can of tinned tomatos
A little olive oil for frying
1 red onion, chopped
1 bunch coriander, finely chopped with stems
1 small green pepper, chopped
1 large gralic clove, chopped
1/4 tsp oregano
1/4 tsp ground coriander
1/4 tsp sweet pepper
1/4 tsp cinnamon
Cayenne pepper (optional)
Sweat the onion in olive oil for a few minutes on low heat, then add the coriander stems (keep the leaves for later).
Add the green peppers, garlic and spices and stir for a minute until fragrant. Drain the jackfruit and add the pieces to the pan, tearing them apart with a fork.
Stir again for a minute before adding the canned tomatoes. Add salt and cayenne pepper, increase the heat and simmer for 15 minutes.
Roughly chop the coriander leaves and add them before serving with your favourite spices and condiments.
