Penne with hemp pesto
To make the pesto: add all the ingredients to a blender. Blend on high until smooth and set aside. Wash and dice potatoes into small cubes.
Boil a large pot of salted water. Add diced potatoes and cook for 5 minutes. Add green beans and cook until al dente, 2 to 3 minutes. Fish vegetables out, then cook pasta in the same pot according to package instructions. Drain, reserving about 100ml cooking water.
Add pesto, vegetables and pasta to a large serving bowl. Adjust consistency with reserved pasta water. Toss to combine and serve.
