Preheat the oven to 200°C and line a large baking sheet with parchment paper. Place the jackfruit onto the baking sheet and use your hands to gently mix with the wine vinegar and pepper. Move the seasoned jackfruit onto one side of the sheet. Add the sweet potato, broccoli, and mushrooms to the other side of the sheet. Top with the oil and salt, then mix until coated.
Roast the vegetables for 25-30 minutes, or until lightly browned.
To serve, mix the rice with the sushi vinegar (optional). Split the rice between two bowls and add the jackfruit and roasted vegetables.
Top with a drizzle of coconut aminos and serve with a side of pickled ginger. This can be served either warm or cold.
