In a food processor make oat flour from the rolled oats (pulse for about 1 minute). Then add all other ingredients and make sure everything is carefully combined. Let it sit for 20 minutes. Melt the coconut oil in a pan and add spoonfuls of the pancake batter. Fry for about 1.5 - 2 minutes, flip and cook for another 1 minute. Serve with nut butters and date syrup or hazelnut cacao creme.
