Green Goddess Wraps
4 Planet Plant-Based red beet wraps
1 batch edamame hummus
1 large avocado, sliced
1 large handful sprouts (sunflower, radish, bean, etc.)
1 handful snap peas
½ cucumber, julienned
1 handful lettuce
10g herbs of choice, finely chopped (parsley, cilantro, basil, mint)
- Place the wraps onto a flat surface and add a heaping spoonful of edamame hummus to each. Spread with the back of a spoon to cover the middle of the wrap.
- Top each with even amounts of avocado, sprouts, snap peas, cucumber, lettuce, and herbs. Wrap tightly and cover with parchment or wax paper, tying with string, if transporting. These are best eaten fresh, but if you want to make them ahead of time, add a layer of (dry) lettuce before the hummus and other ingredients as a barrier between them and the wrap.
