Jackfruit Loaded Sweet Potato Fries
2 medium sweet potatoes, cut into matchsticks (fries)
2 tsp olive oil
1 tsp salt (to taste)
½ tsp pepper
60 grams non-dairy yogurt
2 tbsp lemon juice
1 tbsp Planet Plant-Based tahini white
½ tsp salt (to taste)
½ tsp black pepper
¼ tsp cumin
⅓ recipe Cashew Butter Jackfruit
1 avocado, diced
Handful sprouts (radish, sunflower, etc.)
Handful parsley or cilantro, finely chopped
2 tbsp sesame seeds
Sweet Potato Fries
Tahini Yogurt Dressing
Preheat the oven to 200C and line a large baking sheet with parchment paper.
Place the sweet potatoes, oil, salt, and pepper onto the sheet and mix well to coat.
Bake for 20-25 minutes, or until golden. While the fries are baking, prepare the dressing and toppings.
To make the dressing, add the yogurt, lemon juice, tahini, and spices to a jar or container. Shake to mix well.
Once the fries are ready, top them with the Cashew Butter Jackfruit, avocado, pickled onions, sprouts, herbs, and sesame seeds. Drizzle the tahini yogurt dressing overtop or serve on the side, and serve hot.
