4 Planet Plant-Based Red Beet Wraps
4 tablespoons hummus
4 large pieces of lettuce
⅓ recipe Cashew Butter Jackfruit (warmed or cold)
¼ white cabbage, thinly sliced or shredded
1 carrot, shredded
1 avocado, thinly sliced
3 tbsp Planet Plant-Based peanut butter (smooth)
2 tbsp Planet Plant-Based coconut aminos
2 tbsp lime juice
1 tsp Planet Plant-Based Date Syrup
½ tsp black pepper
½ tsp cayenne pepper (to taste)
Peanut Butter Sauce:
To make the wraps, add a tablespoons hummus to the base of each wrap. Top with the lettuce, Cashew Butter Jackfruit, cabbage, carrot, avocado, and pickled onions. Other vegetables – cucumber, sprouts, peppers – are all good here too.
Fold the wraps around and secure with a toothpick.
For the sauce, add all of the ingredients to a jar or container and shake to mix well. Serve as a dipping sauce for the wraps or drizzle it inside if you prefer.
These pack well because the wraps don’t get soggy, but if you want to make them several hours in advance, layer the lettuce first before the hummus
