Organic Edamame Fettuccine

Made with edamame beans and nothing else, our Fettuccine is a tasty and nutritious alternative to wheat-based pasta. It's super-quick to cook - perfect when you want to whip up a delicious and nutritious meal in no time. It's rich in fibre which aids digestion and satisfies hunger for longer. Unlike regular pasta, our Edamame Fettuccine is packed with protein and low in carbohydrates.

You'll love it because It cooks in 3-4 minutes, and contains 45% protein.

Inspiration
Boil the fettuccine in a large pan of salted water for 3-4 minutes until al-dente. Bring a frying pan to low heat, add 1/2 tbsp of sesame oil and a minced clove of garlic and stir for a minute until fragrant. Add 1 cup of coconut milk, 2 tbsp of Smooth Peanut Butter and 1 tbsp of Coconut Aminos. Bring to boil, stir until smooth, turn off heat and set aside. Add colourful, thinly sliced raw vegetables e.g. carrot, peppers and courgette, plus fresh coriander and chili, to the pasta and toss. Drizzle with the sauce and a squeeze of lime. Garnish with chopped salty peanuts and enjoy.
