Inspiration
Make a quick green cashew pesto, by blending a little olive oil with fresh green herbs of your choice (we love basil, dill, parsley and a little coriander), a spoon of cashew butter, some lemon juice, salt and a few drops of date syrup (taste your way to your preferred level of sweetness). Cook your pasta, and a few vegetables you have at home. Stir cooked vegetables and pasta through the cashew pesto and finish with some freshly cracked black pepper.
