1 box Planet Plant-Based Black Bean Spaghetti, cooked
⅓ recipe Cashew Butter Jackfruit
1 carrot, grated
1 bell pepper, thinly sliced
1 cucumber, quartered and thinly sliced
¼ red cabbage, thinly sliced or shredded
1 large handful sprouts (bean sprouts or pea/radish/sunflower shoots)
Cilantro, to serve
2 tbsp Planet Plant-Based cashew butter
2 tbsp Planet Plant-Based coconut aminos
2 tbsp lime juice
1 tbsp finely grated ginger
1 clove garlic, minced
1 tsp Planet Plant-Based Date Syrup
½ tsp black pepper
½ tsp cayenne pepper (to taste)
Begin by cooking the spaghetti. Rinse well with cold water once it’s ready.
Place the spaghetti, Cashew Butter Jackfruit, carrot, pepper, cucumber, red cabbage, and sprouts into a large bowl.
To make the dressing, add all of the ingredients to a jar or container and shake to combine. Pour over the spaghetti and vegetables and mix well to coat.
Serve chilled or at room temperature, topped with cilantro.
